Pineapple Stuffed with Ribs Wrapped in Bacon – Delicious

Check out this pineapple hollowed out in the middle and stuffed with boneless country style ribs, then wrapped in bacon. Quite a meat feat, isn’t it?

Slow-cooked over mesquite, the “swineapple”, which was first created by Josh Bush, has gained popularity in the Internet that several people have attempted to make their own version of it.

 Mmmmm… craving for a bite yourself? With these simple steps, you can create yours, too!
1. Peel off the pineapple’s skin, including its eyes, but leave the top and bottom. You’ll gonna use it for later.
2. Cut the pineapple into two from.
3. Remove the core (the hard part in the middle) and hollow out the desired space for your meat.
4. Season your meat with any of your favorite seasonings. A more course rub is better. Put the meat inside. An alternative would be boneless chicken thighs.
5. Put the cut piece back on to look like a complete pineapple again. Lightly season the pineapple.
6. Wrap the reassembled pineapple with thick cuts of bacon. Secure it with skewers or barbecue sticks.
7. Set the smoker at 240 and place the pineapple inside.
8. Spray the pineapple with apple juice every 20-30 minutes to keep the bacon moist and colorful.
9. Allow it to cool before serving.

Here’s how to do it.

You’ll need:

12 slices of bacon

4 pieces of sliced pineapple rings

4 mozzarella string cheese sticks

2 large pieces of sweet yellow onion, cut into 1/3 inch rings

1 pinch of your favorite barbecue rub

2 tablespoons of your favorite barbecue sauce

1. Cut the yellow onion into 1/3 inch rings (Match the onion rings to the size of the pineapple slices).

2. If you’re using canned pineapple slices (which is more preferrable), drain the juice and set the slices aside.

3. Tear the mozzarella string cheese in half. Put half of it in the onion ring and the other half to fill in the remaining gap.

4. Place the mozzarella-lined onion ring on top of the pineapple and wrap it with bacon slices. Use as many slices of bacon to wrap the ring until everything is in place.

5. Once wrapped, sprinkle the rings with your favorite barbecue rub.

6. Cook indirectly at 400F for 30 minutes.

7. Rub with your favorite barbecue sauce. Let it cool down for a few minutes before serving. You can serve it with some dipping sauce.
